Welcome! 

The number of stitches compared to the number of rows in knitting is purely a function of the image you're using to create your pattern.  While you can choose the number of stitches (width) for your pattern, the number of rows (length) is adjusted for automatically by the software.  The reason for this is to avoid distortion of your pattern.  If you're getting (for example) 25 stitches by 25 rows, it's not because your image is necessarily square, but because making that same pattern 25 stitches by 50 rows would elongate the pattern and very likely give unacceptable results.

The best way to control the length or width of your finished graph is to add borders to your image accordingly.  If you want a wider graph, add borders on the left and right; if you want a longer graph, add borders on the top and bottom.

If you still find you're getting an equal number of rows and stitches, is it possible you're choosing cross stitch - which is a square stitch, not a rectangular one?
