Do you begin with a foundation row or do you just start with the word pattern when crocheting?

Welcome!
Every graph still must start with a chained foundation, unless you're using a chainless technique. Once your chain is established, you can then commence row one from the graph. If you're looking to have borders around everything, you can either wait until the entire piece is finished to work around everything or add rows before and after, keeping in mind the word chart will go from right to left, then (after turning) left to right (though to you it will still look like you're
working
right to left, but the word chart is leading you in the opposite direction on subsequent rows).
